WHere is a simplified version of a cocktail found on a new cocktail list. It's a large-volume pre-mixed which is packed with flavours of a Christmas time, which makes it perfect for a celebration. Any leftover syrup for morning drinks, desserts, or for more rounds of this cocktail.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the items inside a saucepan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, turn off the heat allowing it to reach room temperature completely. Pour into an sterilised bottle, cap it and store in the fridge, it will last for up to four weeks.
To make Batch Mix: Pour every liquid ingredients into a large bottle, let it rest for an hour, then strain preferably using cheesecloth, making it fully clarified.
To serve: Add 85ml of your batch mix to a cocktail shaker filled with ice, and agitate gently for about 60 seconds until cold. Pour into an chilled martini glass or similar, decorate with the cranberries and complete it by giving it a brief mist with the mandarin essence over the drink.
